Cauliflower Tabbouleh w/ Mediterranean Beef Patty

  • 1 1/2 cups raw cauliflower rice
  • 1 cup minced fresh parsley leaves
  • 1/2 cup minced fresh mint leaves
  • ¼ cup minced shallots
  • 1 cup diced tomatoes
  • 2 cucumbers, seeded and diced
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice, or to taste
  • 1 tablespoon red wine vinegar
  • 1 teaspoons sea salt
  • 4 Tribalí Mediterranean Patties


In a large bowl combine olive oil, lemon juice, vinegar and salt and whisk to combine.  Add in cauliflower rice and stir to coat. Let sit for 5 minutes, then add in parsley, mint, shallots, tomatoes and cucumbers. Stir to combine and season with salt and pepper to taste if necessary.  Cook the Tribalí Mediterranean Patties according to package directions and serve on top of the Tabbouleh.
